Tritt Students Learn to 'Dig Their Food'

Two chefs visited the East Cobb school to demonstrate healthy eating choices.

Last week students at East Cobb's Tritt Elementary School were visited by chefs as part of National Farm to School Month, National Lunch Week and National Food Day. 

The two-day "Dig Your Food" observance included demonstrations by Chef Mark Ainsworth of The Culinary Institute of America and Adam Brumberg of Cornell University’s Food and Brand Lab. Both Ainsworth and Brumberg are recognized for their work in school food and lunchroom research.

They discussed healthy food preparation and food pairings and presentation, based on recent research about how and why students make their choices in the lunch line and how to help them make healthier choices at school and at home.

The event was hosted by Cynthia Downs, the head of the food and nutrition team for the Cobb County School District.

“We want our students, our parents and our administrators to better understand what we are offering our students today and the way that we’re developing our menus,” said Downs.

“We’re extremely proud of the quality and selections of the foods we’re providing, which include fresh, locally grown fruits and vegetables, low fat dairy and whole grains."

Among the concoctions produced at the demonstration: Apple crisps, with the recipe included in the attached PDF.
